Bondchiladas

As much as I love it, there is a downside to keeping this blog. I feel guilty when we don’t do anything! We had a pretty low key weekend, but mom thinks we’re floating in the Thames if I don’t update every few days, so here it goes. I had lots of school work to do and Mike had some work to get done so a large majority of our weekend was spent on the couch on our computers. There were two highlights to this weekend of toil- James Bond and Enchiladas.

On Bond. We usually get movies over here 3 weeksish after they open in the states, which is just enough time for the hoopla to die down and make us not care any more. Every once in a while, we get one first and it is glorious! I love James Bond movies and the last one was my favorite ever so I was anxiously anticipating Quantum of Solace. (terrible, terrible title) We got tickets for a late Saturday night showing out at the O2 arena. But to prepare for Saturday, we decided a reshowing of Casino Royale was in order on Friday. So our plans Friday were to stay at home and watch a movie. What to eat with that movie?

On enchiladas: I love enchiladas. I am typically a fajita girl but everyonce in a while, you just need an enchilada. I tried making them once before and they were good. Not great. I used a recipe for beef enchiladas and subbed ground pork and the sauce was from a jar and it was just meh. Partly because I never ordered beef enchiladas ever, I ordered cheese. So I set out to find the perfect cheese enchilada recipe. And I did. I went over to one of my favorite foodie blogs, Homesick Texan. She has a love for all things Texas and has a great website. And lo and behold she had a cheese enchilada with chili gravy recipe. I don’t want to copy and paste it from her site because that is stealing and stealing is WRONG. So go here to look at it and make it and love it. I used a mixture of extra mature cheddar (for flavor) and velveeta (for creamy meltiness). So, I am still counting the days until fajitas but for now, consider our enchilada itch officially scratched!

On Bond Again. After our feast and rewatch on Friday, we were ready to go to see some 007 action on Saturday. It was awesome. The fight and chase scenes were perfect, the story was great and Daniel Craig is the best Bond since Sir Connery himself (maybe better but that is a discussion for another day). Mike says I kept yelling at the screen, but I don’t know if I believe him. I have always thought I would make an excellent assassin, because really, who would suspect me? So I get really into the movie! So when it opens up in a couple of weeks, go get some enchiladas and go see it!

    Remember your roots, its TEXAN. There is only one thing to eat in TEXAS and that is beef, beef and more beef. Pork enchiladas??? Yuk! Love ya, Dad.

    Sorry! Afraid it’s the back-stage mother in me, but I worry too when the blog remains unchanged for more than a few days. Good to know that you are okay though! By the way, I think Dad forgets the Moooo-rrrggggghhh episode!
